Recipe: Cap'n Crunch French Toast w/ Blueberry Sauce

I didn't realize it at the time because I was still waking up but I was also taking a photo of my clean laundry LOL. I had put it off the night before and there it was staring me right in the face the next day but it would have to wait because I had a hungry family to feed breakfast to!

I had been wanting to add a bit of fun crunch to my french toast to keep it interesting for the family when I stumbled upon a recipe quite by accident. I made my own tweaks to it and we think it is just perfect! The blueberry sauce is the perfect topping since traditional syrup would be far too sweet plus blueberries are in season here in Michigan or course. This is a fun recipe to make with the kids. I let mine smash the cereal in a bag and whip the eggs up, they loved it. Don't forget to wear your stretchy pants for this one!

Ingredients:

6 large eggs 

2 cups heavy cream 

1 teaspoon pure vanilla extract 

1/2 cup butter 

3 cups Cap'n Crunch cereal (use brand name)

3 cups Rice Crispy cereal 

1 loaf Texas toast thick bread 

 

How to put this all together:

Pour the cereal into a gallon-size ziplock bag and crush to a course meal. I like to throw in a small palm-full of some whole pieces for added crunch. Pour into a shallow dish, I like to use an 8x8 brownie pan to dredge in.

  1. Combine eggs, cream, and vanilla in a large bowl. It will have a nice thick custard consistency.
  2. Soak each slice of Texas Toast in wet ingredients, 15 seconds each side. Be sure the edges are moist, too.
  3. Dredge in the crushed cereal lightly press onto each side, and around the crust. Place on parchment paper until all slices are coated.
  4. Heat 2 tbs. butter in large skillet, then gently place slices in pan; two at a time.
  5. Cook three minutes per side. Place on parchment covered baking pan in a warm oven.

Blueberry Sauce Ingredients:

1/2 cup granulated sugar

2 Tbsp cornstarch

1 cup water

4 cups frozen blueberries (fresh works too!)

How to make this delicious sauce: 

  1. In a medium saucepan, combine sugar and cornstarch
  2. Gradually stir in water.
  3. Add blueberries and bring to boil over medium heat.
  4. Boil for 2 minutes stirring constantly.
  5. Remove from heat.
  6. Cover and keep warm.
