Recipe - Quick and Easy Mandarin Orange Cheesecake & Shortbread Crust

Mmm doesn't that look good?  I made this little cheese cake for a special family dinner the other night and it was so good.  I used an old pie tin that I had washed out and saved.  So here is the recipe for this delicious mandarin orange cheesecake with a shortbread crust.  Relax, you don't even need to turn on the oven!  I skipped the orange jello part for the top, it's really good but all I had was 1/2 a pack of orange gelatin in my pantry.

Crust:
1 package of Archer Farms shortbread cookies (from Target) finely ground (these are the best!)
      *throw these into a couple ziplock bags and let the kids smash them into oblivion with something that can't break
1/2 cup unsalted butter, eh I used salted...it was still good
1/4 cup sugar

Directions for the crust:
Melt the butter, add the sugar then add the cookies, stir together then press down into your pan or pans depending on how thick you want that crust.  Toss this into the fridge or I prefer the freezer.

Cheese Part:
1 (8 oz) package of cream cheese, softened 
1/2 cup sugar
1 (8 oz) tub Cool Whip extra thick and creamy, thawed
1 package orange gelatin
1 large can mandarin oranges, save that liquid!
1 cup boiling mandarin orange liquid, can add water if you are short some


Directions for the cheese filling:
Whip together the cream cheese and sugar then add in 1/2 cup boiling mandarin orange liquid and 1/2 of the orange gelatin and whip that up until it is well incorporated now once this mixture has cooled a bit you can fold in the Cool Whip.  Get that cold crust out and fill that baby up with your cheese mixture!  Now I like to throw it into the freezer after putting a cover on top, it needs to get really cold so it will be able to be cut into without flowing all over the place.  Once it has chilled for a couple hours then I take it out, place the mandarin oranges all over the top in a pretty little pattern.  Mix together the other half of the gelatin pack with 1/2 cup boiling liquid and pour this over the top then put it back in the fridge to firm up overnight.
