Quick and Easy Last Minute Family Dinner Recipe : Southwestern Cornbread Bake

 Southwestern Cornbread Bake

Ingredients

1 (10-oz.) package yellow rice mix (can just use white instant rice)
1 cup chopped onion
1 lb ground beef
1 taco seasoning packet
1 jar (2 cups) mild corn and black bean salsa

2 cups (8 oz.) grated Monterrey Jack cheese or a Mexican blend
1 dash of your favorite hot sauce or a bit of chili powder if you like it spicier (optional) 
1 package corn bread (eggs, oil and milk)

Preparation

1. Preheat oven to 350°. Prepare rice according to package directions.
2. Meanwhile, saute onion until it is translucent then add in ground beef and stir until cooked.
3. Add in taco seasoning, black beans and salsa then stir until well mixed.
4. Spoon into a lightly greased 3-qt. or 13- x 9-inch baking dish; sprinkle with cheese.
5. Mix corn bread according to package directions, add in hot sauce or chili if you wish.
6. Pour corn bread over the top of the meat and cheese mixture.
7. Bake, covered, at 350° for 30 minutes; uncover and bake 10 minutes or until cornbread is done.



*Serve with low fat sour cream, can just add in a whole can of black beans and a can of chopped tomatoes as a substitute for the beef.  *Salad for side dish
