     For us in Michigan the cold blustery winter is just beginning.  We haven't had much snow this season but today we did see some flurries.  The air was bitter outside as the wind blew icy rain down.  I was headed to the grocery store to gather ingredients to make a hot winter soup.  Hot soup is the perfect meal this time of year.
     I have to admit that this soup is not made from scratch and it doesn't take any great skill.  With everything going on for the holidays I needed an easy meal without sacrificing flavor.  The butternut squash soup came from a carton, easily heated and perfectly flavored.  The store bought rotisserie chicken was easy to cut up and add.  The seasoned potatoes were from the store freezer section and the Thai sauce is from WORLDFOODS.  This is EASY.

{Ingredients for Hearty Thai Winter Soup} - serves 3-4
1 carton butternut squash soup - I found mine at Aldis
1 jar WORLDFOODS Thai Coconut Galangal Sauce
1 package roasted potatoes - mine were Green Giant and microwaveable
1 store made rotisserie chicken in butter flavor or lemon butter flavor -Walmart sells a good one
black pepper and some kosher salt *to taste

{How to make}
1. Heat up your butternut squash soup according to the package
2. Place the Thai sauce into a small saucepan and heat over medium heat
3. Microwave the potatoes according to the package
4. Slice up the meat from your chicken
5. Ladel hot soup into your bowls, spoon some of the Thai sauce over that, place some hot potatoes on the top and the hot chicken by its side.  Sprinkle with pepper and salt as you like.  Now just snuggle up with a bowl and stay warm!
