I've always said that happy mornings must begin with a good breakfast, that sends the day off to a great start. My husband works really long hours and he usually comes home pretty beat. If I can swing it, I will get up at the crack of dawn to make him a beautiful breakfast so he has some extra energy to start his day. Strawberry shortcake is his most favorite thing in the whole wide world so I thought I'd put a twist on some waffles for him. I made him some fruity mile high waffles topped with a wholesome fruity topping, fresh bananas and a cool glass of Kool-Aid fruit juice on the side.
From Walmart I purchased the new 96oz Kool-Aid bottles in grape, tropical punch, and watermelon. I also purchased Kool-Aid 190z powdered Peach Mango soft drink mix. My recipe is as follows below, enjoy!
PS - You can take any flavor of Kool-Aid and mix into your batter and/or fruit, I bet any combination would taste amazing. Be sure to serve your mile high waffles with a cold glass of Kool-Aid, it pairs nicely with these.
Kool-Aid Fruit Drink Mile High Waffles Recipe (serves 2)
-1/2 cup chilled Kool-Aid 96oz Tropical Punch #KoolOff
-2 Tbsp Peach Mango Kool-Aid powdered soft drink mix
-2 servings waffle batter
-1 cup frozen strawberries
-1 ripe banana
-1/2 cup whipped topping
1. In a blender add 1/2 cup chilled Kool-Aid Tropical Punch and 1 cup frozen strawberries, blend until mostly smooth
2. Mix up waffle batter and then blend in 2 Tbsp Peach Mango Kool-Aid powdered soft drink mix
3. Cook waffles as usual
4. Cut banana up into slices
5. When waffles are done cut into quarters
6. Build your mile high waffle tower by spreading the strawberry sauce, bananas and whipped topping onto each quarter and then stacking as high as you like
This recipe is so much fun to make. So fruity, so fresh and easy. My favorite part was the strawberry/tropical fruit juice topping! The husband and I really enjoyed our little breakfast time together in the wee morning hours discussing life and our plans for the future. I'm definitely going to be seen with a cold 96oz bottle of Kool-Aid at the beach or our next family picnic. I can't wait to turn a few of the empty jugs into something crafty later on.
