Is it summer yet? My kids are always asking me about summer. It's kind of like when you go on a long car trip, hearing the constant question, "are we there yet?". I do find myself constantly checking the calendar and can't wait for these next few months of freedom. We had to tack on a least one extra week of school due to all the snow days we had and so we aren't out until June 11. Our winter here in the mitten sure was cold and it felt like it would never end! I hope summer weather stays here good and long and I promise to not complain about the heat (too much). The next question from my kiddos once school is out and summer hits is going to be, "what's to eat mom?". I've already got several great snacking ideas in my toolbox though and here I am to share a couple of them with you all.
I went to Walmart to pickup a 12 Count Value Pack of Pepperoni Pizza Hot Pockets. The pictures of the melted mozzarella cheese, thick premium pepperoni slices, and crispy crusts really looked so delicious on the box. I like that Nestle Hot Pockets uses premium ingredients and are a great source of protein.
I also made a stop by the novelty ice cream freezer case to pick out some fruit bars. Edy's Outshine Strawberry Rhubarb Fruit & Veggie bars sounded really yummy and so did the Creamy Coconut fruit bars. The fruit bars are made with real fruit and fruit juice, a great healthy reward for everybody to cool down with.
The other day before the kids headed outside for an afternoon of playing with water guns and sprinklers, I crisped up a handful of Hot Pockets in the microwave. My two growing boys have especially healthy and voracious appetites and so snacking in between meals and getting in protein is very important. Hot Pockets fit really well into our lives, they are so great for snacking.
After all of the squirt gun wars my little cuties were thirsty so I went into the kitchen and got out my Blendtec blender to buzz up some fruity smoothies. My recipe is quite simple. To make beautiful pink and frothy smoothies for four people follow the recipe below. These fruit bars are great right out of the box too!
Chilly Pink Fluff Smoothies
2 cups any milk (I used coconut milk but sometimes use 2% dairy milk)
1 Edy's Creamy Coconut Outshine Bar (cut off the stick, a butter knife works great)
3 Edy's Strawberry & Rhubarb Fruit and Veggie Bars (cut off the stick, a butter knife works great)
1 very ripe and frozen banana (totally can skip this but we like the addition)
One simple step:
1. blend until frothy and light then serve in ice cold glasses (add a strawberry garnish for fun)
