Easy Grilled Chicken and Egg Bake (no grilling involved!)

In keeping with the theme of the movie I decided to make a “blended” kind of meal.  I used Tyson Grilled & Ready chicken from Walmart and whipped up a delicious “brinner” (breakfast + dinner) casserole to share with you all.  I created an easy grilled chicken and egg casserole that will knock your socks off!

In the movie a blending of two families happens, to pull that off it’s gonna take a little bit of crazy and a whole lot of love.  It seems a little crazy (like combining two families) to mix chicken in an egg dish but when put together with a lot of love it turns out fantastic.

To get the free Blended tickets all I have to do is snap a photo of my receipt from my purchase of two participating bags of Tyson Grilled & Ready.  Once I have my picture I just need to email it to Tyson and then I will be emailed a code to get two free tickets to see Blended in theaters May 23rd.  Pretty sweet deal if I do say so myself.  I found my two bags of grilled chicken breast strips in the freezer coolers next to fresh chicken at my local Walmart.  Now if only I knew where I put my receipt…don’t lose yours like I did mine!

My family likes to spend our supper time together since it is the one time of day where we are all home at once.  If the weather is nice for supper time you can usually find us all together at our picnic table in the backyard.  We share what has happened in our day and talk about plans for the weekend.  After supper we enjoy playing outside or if it is getting dark we go inside to have a mario cart tournament on the old Nintendo.

This casserole recipe has a phenomenal Italian vibe going on and is very filling.  I suggest doubling the recipe because you will probably want to have extra for breakfast the next morning.  My children ate every last bit and they don’t even care for kale or onions.  Children eating dark green veggies and not complaining, you gotta love that!

Ingredients needed for this easy grilled chicken and egg bake:
*I used a 24 oz casserole baking dish – makes 2-3 servings

-4 large fresh eggs
-1/4 cup ricotta cheese
-1/4 cup chopped yellow onion
-2 or 3 oz rough chopped fresh baby kale
-1 cup Tyson Grilled & Ready chicken strips (defrosted and cut into 1″ bits)
-1/4 cup artichoke hearts (well rinsed)
-as many sliced fresh tomatoes as you wish (I used 4 small campari)
-1/2 cup 2% milk
-1 cup shredded italian blend cheese plus a small handful for the topping
-1 large slice sourdough bread cubed (1″cubes)
-1/2 tsp salt
-1/2 tsp black pepper
-1 Tbsp italian herb blend
-1 pat italian herb and garlic butter

*Heat oven to 375 degrees F

How to blend this all together:

1. Melt herbed butter in a saucepan over medium heat
2. Cook onions until translucent
3. Add artichoke hearts and heat for 2 minutes
4. Add Tyson Grilled & Ready chicken strips and heat for 2 minutes
5. Fold in baby kale and heat for about 1 minute or until lightly wilted
6. Sprinkle on herbs, stir and pour onto a plate to slightly cool
7. Toss bread cubes into hot pan and flip them around until lightly toasted then turn off heat
8. Crack eggs into a mixing bowl
9. Whisk in ricotta cheese, milk, shredded cheese, salt and pepper
10. Grease a 24 oz size baking dish
11. Place onion,artichoke, and chicken mix into bottom of dish
12. Sprinkle bread cubes over the mix
13. Slowly pour egg mixture over everything in dish until it is 1/2 from the rim
14. Arrange sliced tomatoes over the entire dish
15. Sprinkle extra cheese on top
16. Set dish on a baking sheet and bake for 25-28 minutes or until a skewer poked into the middle comes out clean and egg is set
17. Let cool out of oven for about 3-5 minutes before cutting to serve
*if egg does not seem to be setting up you can put a lid on for the last few minutes of baking
